Sauteed Shredded Brussel Sprouts

Benefits: Brussel sprouts belong to the brassica or cruciferous family of vegetables. They are high in sulfur and help support phase 1 and phase 2 liver detoxification which means they are anti-cancer. They help the body get rid of toxins such as excess estrogen, xenoestrogens from the environment and even heavy metals like mercury and lead. This recipe adds a hint of sweet and the lemon brightens up the flavor. I hope you will give this a try!
Ingredients:
1 tabelspoon ghee
1/2 cup chopped onions
1/2-3/4 pound fresh Brussel sprouts, cleaned and shredded roughly in a food processor
1-2 tablespoons maple syrup
1 tablespoon fresh squeezed lemon juice
Salt and pepper to taste
1-2 tablespoons sesame seeds
Olive oil as desired for serving
Method:
Heat ghee in a large frying pan until it just begins to shimmer, but not smoke. Add in onions and sauté for 2-3 minutes until just turning opaque. Add in cabbage and stir every minute until tender and some pieces are caramelized golden brown. Add maple syrup and lemon and toss to evenly distribute flavors. Sprinkle with sesame seeds. Season with salt and pepper and serve with a splash of olive oil. This makes a great side dish or use it as the base of a bowl for meatballs or other meat/dinner items.
