Benefits: Quick, tasty, filling and the vegetable options are endless!
1 tablespoon (divided in half) healthy fat such as ghee, lard, bacon fat, avocado oil or coconut oil
1/2 pound pasture fed and finished ground beef
1/2 cup diced onion
1 clove garlic diced
1 medium sweet potato, peeled and chopped into ½-inche cubes
3-4 cups chopped red cabbage
1/4 cup hot water
4 cups fresh greens such as arugula, mustard or kale
Seasonings you prefer such as black pepper, sea salt, lemon pepper, etc.
Olive oil for topping
Heat about 1/2 tablespoon fat in a medium-size frying pan until it just begins to shimmer using medium to medium-high heat. Add raw ground beef and cook until no pink remains. Place the ground beef in a bowl to the side and add remaining ghee to the frying pan. Add onion and sauté for 2 minutes. Add garlic and sauté for 1 more minute. Next add sweet potato and cook over medium heat, stirring mixture every 45-60 seconds for 3 minutes. Then add cabbage and toss with ingredients in frying pan. Add the 1/4 cup water. Place a lid on the top and steam-fry for about 3-5 minutes until the cabbage and sweet potato are tender. Remove lid and stir in the ground beef you set aside, the greens, and seasoning. The greens will begin to wilt. Serve in a bowl and top with a splash of olive oil.
